Here’s my favorite fall and winter soup recipe. It’s called a 5 can bean soup. It’s really more of a method than an actual recipe. You basically pick 5 different cans of beans and pour them all in a large pot. Add some seasonings, heat and serve. It’s one of those great go-to meals when your fridge is empty and you just don’t have time to run to the grocery store that week. (Which seems to happen to me about every other week or so).

I also like to keep enough canned goods for a few batches of this soup along with some rice and dry beans in my pantry for emergencies. Quite a few years ago a hurricane hit our town pretty badly and we were out of power for quite some time. Roads were blocked by fallen trees and stores were closed for weeks. It’s good to have some nonperishable food items at hand for those emergencies. There are quite a few good bean recipes that use nothing more than some dry beans, water and a few seasonings. These dishes can easily be prepared on a camping stove or even over an open fire should the need arise. The rest of the time they are just plain good food that’s cheap and filling.
